We are currently looking for talented and highly motivated Chefs to join our busy and dynamic 3 AA rosette kitchen team at The Black Swan Hotel, Helmsley, North Yorkshire.

Reporting to the Head Chef or Sous Chef, you will proactively assist in ensuring the overall quality and effectiveness of the Pastry department, include restaurant, Tea Room and Banqueting. As Pastry Chef you will ensure consistent standards in all areas of the pastry, the main aim being guest care and satisfaction.

Key responsibilities of the Head Pastry Chef include:

– Organising and control of the day-to-day operation of the Pastry ensuring the established standards of performance are maintained and total customer satisfaction is achieved.
– To assist the Head Chef in ensuring HACCP is in place
– To assist the Head Chef or Sous Chef in supervising all food preparation and production in Pastry department.
– Ensure good communication throughout between the kitchen department and Pastry department at all times

As Head Pastry Chef it is essential you can demonstrate the following skills, competencies and job responsibilities:

To prepare, cook and serve food as specified and ensure this meets the appropriate specification, constantly striving for quality and consistence.

– Excellent organisational and time management skills with an eye for detail and the ability to use own initiative
– Customer focused with a commitment to delivering exceptional levels of guest service
– Ability to work under pressure whilst maintaining a positive ‘can do’ attitude
– Highly motivated with a drive to succeed to be the best
– To ensure that all pastry working areas are kept clean and tidy at all times
– Team player attitude

Salary – £25-27K (depending on experience) plus tips.

Reporting to the Head Chef, you will proactively assist in ensuring the overall quality and effectiveness of the kitchen department. As Sous Chef you will ensure consistent standards in all areas of the kitchen, the main aim being guest care and satisfaction.

Key responsibilities of the Sous Chef include:

– Assist the Head chef in the planning, organising and control of the day-to-day operation of the department ensuring the established standards of performance are maintained and total customer satisfaction is achieved, whilst maintaining costs in line with budgets.
– To assist the Head Chef in ensuring HACCP is in place
– Supervise the work of the kitchen team, allocating duties and responsibilities
– To assist the Head Chef in supervising all food preparation and production
– Ensure good communication throughout the kitchen department at all times
– Deputise for the Head Chef in their absence
– Attend meetings as requested by the Management or Head Chef
– To assist the Head Chef in delivering training sessions to the kitchen team
– To adhere to the Food Allergens Regulations

The Ideal Sous Chef

As Sous Chef it is essential you can demonstrate the following skills, competencies and responsibilities:

– Able to motivate and delegate effectively – excellent team leadership skills
– Excellent organisational and time management skills with an eye for detail and the ability to use own initiative
– Customer focused with a commitment to delivering exceptional levels of guest service

– Assisting the Head chef in supervising food preparation and production

– Monitoring the temperature, quality and portion size of all food served from the kitchen areas
– Leadership skills combined with a team player attitude

Reporting to Head Chef and Sous Chef, the Chef De Partie is to work along with the Sous Chef to maintain standards set by the Company Operating Standards, ensuring the Kitchen hygiene standards are without exception adhered to.  To ensure that guests receive at all times through effective communication, with all departments the highest level of customer care.  Ensure

Key responsibilities of Chef De Partie include;

– Ensure that all working areas are kept clean and tidy at all times
– Prepare, cook and serve food as specified by the Head Chef and Sous Chef  and to ensure that the food meets the appropriate specification
– Assist the Head Chef and Sous Chef to supervise the Commis Chefs in all food preparation and food production in all kitchens
– Assist the Head Chef and Sous Chef in ensuring HACCP is in place to ensure due diligence in preventing an outbreak of food poisoning
– Monitor the temperature, quality and portion size of all food served from the Kitchen areas
– Assist in food ordering by informing the Sous Chef when stocks are reaching par stock levels
– Ensure good communication throughout the Kitchen department at all times
– Ensure the effective control of refrigeration and dry store goods to ensure that there is no waste
– Ensure that all areas of responsibility are kept sanitised and free from dust and debris at all times, following, strict and pre-agreed cleaning schedules.
– Assist the Sous Chef to be responsible for all stocks held in the department, its requisition, safe storage and usage to ensure proper control of costs achieved.
– Assist the Head Chef and Sous Chef  to ensure that all services used are correctly recorded and charged to the appropriate guest
– To be dressed in a smart and professional manner in conjunction with the company standards
– To adhere to the Food Allergen Regulations

As Chef De Partie it is essential you can demonstrate the following skills, competencies and job Responsibilities:

– Maintains food quality and presentation
– Ensures recipes are correctly prepared
– To minimise waste and spoilage by correct use of product and proper ordering
– Ensure that everything is properly stored
– Assist with menu implementation
– Assists in storeroom and receiving area spot checks
– Team player attitude
– Basic Food Hygiene
– Capable of running all sections
– Able to work under pressure
– Approachable
– Intermediate Food Hygiene

Salary – £19-20K (depending on experience) plus tips.

As a Commis Chef you are assisting the team in their section to ensure the highest standards of product, reporting into the Sous Chef or Chef de Partie.

– Preparing, cooking and serving food as instructed and to ensure that the food meets the company specification
– To assist in ensuring that the kitchen practises  following the company food safety policy compliance to our HACCP system
– Monitoring the temperature, quality and portion size of all food served from the Kitchen areas
– Ensuring the effective control of refrigeration and dry store goods to ensure that there is no waste

As Commis Chef it is essential you can demonstrate the following skills, competencies and job responsibilities:
– Able to work under pressure
– You must have a passion for food
– Basic Food Hygiene Qualification
– It is essential to have effective communication skills
– team player attitude

Salary – £17.5K (depending on experience) plus tips.
